There’s one day of the year that Australians love probably more than any other national holiday and that’s Australia Day. Celebrated annually on January 26, the day commemorates the arrival of the First Fleet at Sydney Cove in 1788, the hoisting of the British flag there and the proclamation of British sovereignty over the eastern seaboard of Australia. If you would like to have a hog roast for an important upcoming event, there’s no doubt you want to choose the best company out there to provide your guests with quality meat and a high level of service at an affordable price.
So how to do you ensure the company you choose is the best one? There are a few things you need to do to ensure you get what you pay for. The first thing to do is to have an idea in your head of what you want, that way it will be easier for you to match a company with your needs and wants.
So write down how many people you are expecting to cater for, what type of roast you want – hog, spit or lamb, and whether you want sides and salads or whether you will provide them yourself. You will also need to decide if you want to supply the plates and cutlery etc or whether you want the company to.
Once you have all of this in your mind you should start doing some online research. Get yourself a list of five companies that look credible and have easy to use websites with plenty of information on them. Once you have your shortlist, see if you can find some customer references, if they have them it is a good sign the company is good at what they do. Now you can start the phone calls and obtain quotes.
When you’re on the phone with the company you can usually gauge how good the company is by how you are treated on the phone. Is the person you are speaking to knowledgable, curteous and helpful? Write comments down next to the company name about how the customer service was. Just becuase you call up and get a really cheap quote doesn’t mean they are the company for you. Did they run through the set up with you? Or let you know how long it would take them to cook and serve? What about the quality of their meat? Where is it sourced from?
You want people to answer all your questions and do so in a professional and polite manner. If they sound professional on the phone and have a professional site with customer references available to view, chances are the company should be able to provide you with a quality hog roast service.

This year promises to be bigger and better than 2009 – there’s so much to look forward to, new designs for cars, clothes and appliances as well as new never before seen holiday destinations!
But what’s surprising is that spit roasts are fastly becoming the catering option of choice for many corporate and sporting events for 2010. It shouldn’t really be surprising in actual fact as spit roasts are the perfect way to feed a large amount of hungry guests in a creative and different way.

It’s already Christmas, who can believe this year has gone as fast as it has? With 2009 behind us it’s time to focus on 2010 and what we hope to achieve throughout the New Year. 2009 was a roaring success for BigRoast.com we saw an increased number in bookings around the summer period and a surprising amount of Christmas bookings.

It’s that time of year again, the silly season, where people get dressed up as Santas and drink copius amounts of egg nog and other assorted beverages, usually rendering them legless. But it’s also the time of year where, if you are in charge of organising the staff Christmas party, it’s time to get your thinking cap on and decide where you’re going to have it and more importantly what kind of party you want it to be.
You could opt for the catered office party, where you simply bring the food, drink and music to the office. This option is a less expensive option as you won’t have to fork out venue or room hire fees and makes it easy for the staff as they don’t have to get themselves anywhere. Although this option can sometimes be seen as a little ’slack’.
A great idea for a staff party is to look into hog roast hire and have a hog roast in a nearby park. That way you can all get out of the office and still enjoy food and drinks in a party environment. If people want to party on afterwards they can head to a local pub or bar without too many hassles.

Everyone loves a classic lamb roast recipe, but these days people chop and change the classic recipes around to make them all snazzy and end up losing the traditional taste that we all know and love in the process. So here at BigRoast.com we’ve decided to share a recipe that we think produces one of best roast lambs you’ll ever taste! This recipe serves four.

Roast Lamb is the perfect Christmas dinner dish
What you need:
1.6kg leg of lamb
3 garlic cloves, halved
2 tbs fresh rosemary leaves
60ml olive oil
1kg chat potatoes, halved
300g frozen baby peas
20g butter
2 tbs shredded fresh mint
Wine gravy
2 tbs plain flour
375ml chicken stock
125ml dry white wine
What you do:
1. Preheat oven to 200°C. Cut six slits, 2cm deep and 2cm long, into the lamb. Press one piece of garlic into each slit. Place the lamb in a large roasting pan. Sprinkle evenly with rosemary and drizzle over one tablespoon of oil. Season with salt and pepper and roast in oven for 15 minutes.
2. Remove from oven and place the potato, in a single layer, around the lamb. Drizzle the remaining oil over the potato. Season with salt and pepper. Roast in oven for a further 1 hour for medium or until cooked to your liking.
3. Cook peas in a saucepan of boiling water for 3-4 minutes or until just tender. Drain and return to pan then add the butter and mint and toss to combine.
4. Transfer the lamb to a plate and cover with foil. Set aside for 10 minutes to rest. Turn potato and roast in oven for a further 10 minutes or until crisp. Transfer to a bowl and cover with foil to keep warm.
5. For the gravy, place the roasting pan over high heat. Add the flour and cook stirring for one minute or until the mixture bubbles. Gradually add the stock and wine, and cook, scraping the pan to dislodge any bits that have cooked onto the base, for 5-8 minutes or until the gravy thickens.
6. Thickly slice the lamb across the grain and serve with potato, peas and gravy.
