The lamb ‘Mechoui’ package. New for 2012, Big Roast has introduced a “North African Mechoui” package which combines spit roast lamb with our special harissa dressing to drizzle over your meat and give it a real zing.
Mechoui (pronounced meshwee) is the North African term for meat – usually lamb – roasted on a fire, and if you’ve got something to celebrate, a mechoui is the way to go. Cooking methods vary throughout the region – for instance in Morocco meat is roasted in pits dug out of the ground. At Big Roast, we won’t need to dig huge holes in your garden – we specialize in spit roast whole lambs and are expert at cooking them to perfection so you get the tenderest meat with a delicious crispy crunchy layer of crackling.
A mechoui wouldn’t be a mechoui without the addition of one of the other authentic flavours of the region – harissa. Traditional harissa paste is a blow-your-head-off fiery concoction of chillies, garlic and North African spices. But here at Big Roast, we don’t want any heads blown off, so we have created a gentler harissa-style dressing to go with your lamb.
This Gold Lamb Roast Package also includes a delicious selection of North African salads, freshly prepared by our Leith’s trained chef:
- Fattoush: (V)
This fresh tasting salad is a classic Lebanese favourite. Strips of toasted pitta bread are combined with cucumber, tomatoes, mint, coriander and parsley, all brought together with a lemon and olive oil dressing, flavoured with sumac – a citrus-tasting middle eastern spice made from sumac berries.
- Tabbouleh: (V)
Another Middle-eastern classic salad, Tabbouleh is a fresh, herby salad made with bulgur wheat, tomatoes and spring onions, mixed with loads of fresh flat leaf parsley and mint which is tossed in a lemon juice and olive oil dressing.
- Carrot and Orange Salad: (V)
A fresh, vibrant salad made with grated carrot, orange segments, plump sultanas and flat leaf parsley. A dressing of orange juice, olive oil, and orange flower water really brings these simple ingredients together and elevates them into something special.
Also included are all the plates, cutlery, rolls and sauces, and one of our trained chefs to make sure you have a succesfull event.

Lamb roasts are a quicker affair than roasting a whole hog – and customers should allow around 4-5 hours from our arrival until everyone has been served. A normal lamb roast event takes the following structure –
- We arrive about 4-5 hours before serving.
- After our initial set up, loins take around 2 hours to be cooked, while whole lambs take 2 and a half/3 hours to cook.
- Our experienced chef takes 20 to 30 minutes to carve the meat.
- We recommend serving the lamb straight from the machine to keep it nice and warm, and serving takes around 30 – 45 minutes for up to eighty people.
- We serve our lamb with mint sauce and customers can choose to serve themselves salad and rolls. If customers wish us to marinate the lamb prior to serving this is also possible.
- We clean and clear away, leaving you to enjoy your event.
